Obviously I've been on a crazy pie baking extravaganza lately. I think it's because I'm pregnant. My female hormones are in overdrive. MUST MAKE BEAUTIFUL PIES!
One of my husband's favorites is apple and I figured it was appropriate since last week was the fall equinox. I wanted to spice it up a little so I made a pecan streusel topping instead of a regular crust. It was divine! My husband said it's like having a delectable cookie right on top.
I used this recipe for the pie filling, this recipe for the crust (I swear by this. It ALWAYS comes out perfect), and this recipe for the streusel topping (I added 1/2 a cup of chopped pecans to the streusel recipe.)

This looks fabulous...my youngest daughter is coming home from college for a few days next week and we are going apple picking. There are loads of orchards here and we're planning to make some pies and applesauce and maybe muffins or who knows what. I think we'll try your recipe. I prefer just a single crust pie anyway. They're less fattening, right? : )
